I have heard and read about aging a brisket for a couple weeks before smoking. Do you all do that? What temp? Im assuming it stays good that long...btw its a costco prime pack date 9/23

More will chime in but I think I wet aged my last costco cryo packed brisket for 3 or 4 weeks.Large, Medium, MiniMax, & 22, and 36" Blackstone

I haven't done it, but I believe most go for 28 days to get a more beefy flavor. You will have to cut off the dried part of the meat after bit has aged. Others should chime in.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.
