Planning on doing these while I do yard work today.. I will probably run the dome at around 275, and just check on them from time to time then sauce for the last 30 min. I think it will be about a 5 hour cook...

I just bought both boned and boneless hocks for doing my own smoked ham hocks. I noticed the boneless were really good and ending up eating most of them off the Egg when done. My thoughts was next time try doing just like you did.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).
