5 lbs of Smoked Bologna

Recenty I smoked a 5 lb stick of Bologna for the first time. I scored the stick and rubbed with mustard and Butt Rub. It was smoked at 250 for about 4.5 hours. The Bologna was sliced thick and made into sandwiches. It was very good and wil be cooked again.

Would you consider doing it without the rub next time?

I have smoked Bologna 2 times now. The first time was with a similar rub and the second time without any rub. The best in my opinion was the one without.

I like slicing the Bologna into 1" chunks to get more smoke into it like this.

Smoked Bologna is great. At large functions we will smoke it, dice it, roll it in sauce and then throw it in a big bowl with a box of tooth picks next to it. This usually goes before anything else.
At our local competition we always feed the local police department as they are patrolling the comp. This year we went all out and fixed 30 pounds of tri-tip with all the fixins. They wanted to know where the bologna was! Had to make a run to the store and make some!
