Gai Yang Chicken with Pickled Stiff

Chicken was split and mostly deboned and marinated with cilantro, fish sauce, garlic, coriander and brown sugar for 3hrs. Cooked on the extender at 250 direct for 2hrs then turned the heat up to crisp the skin


Served up with some cucumbers and onions that were pickled in rice vinegar, sugar and a little water.   


Flavors were unreal and will be done again.
