Ribeye Caps

Costco comes through again!  My Thursday run turned up some prime ribeye caps that were rolled and tied into a thick filet. 


Reverse seared until around 100 IT and then cranked the heat with some cast iron. 

2 min per side and IT rose to around 135. Pulled and topped with a Neuskes bacon and chive compound butter. 

Served with some crispy potatoes with the Neuskes runoff ;)  Love the reverse sear - can really dial in the temp for a strong finish!
