I just bought a nine pounder this afternoon and was disappointed to find it had no skin. It is a beautiful cut well priced but I wanted my dang cracklins!

I wish I could find skin off belly. The only thing around here seems to be skin on. At $2.00 a pound the price is OK but I think it cures as bacon better with the skin off. Also seems my knife sharpening skills could use some help.
  • The one I got at Costco was skin off.  However, I was just happy to find it period as my Costco used to not carry it at all.

I've never tried to cure or cook with the skin on. I've alays removed it and made cracklins. All I can find here with skin on though is in 2lb range and kind of thin.
