Another brisket post from me. I have cooking these down to a science now. Always blow my mind. No egg pics. But all in all 21 hours. Prime from Costco at 2.99lb and it was a 15lb

Nailed it-what dome temp did you run with as I am seeing them come up short (time-wise) for the past year or so.
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

I haven't had good luck with briskets going at 275. I really started getting consistent awesome briskets at 250 dome. Did my first brisket on the egg this past weekend. 250 degrees for 12 hours and it was done. A little smaller than yours, mine was more in the 8-9# range so I am guessing that accounted for the shorter cook. All in all I am pleased with the cook, but mine is a little more 'fall apart' than yours. But darned tasty...EggMcMcc
