First time boston butt - suggestions?

Making my first run at a boston butt this weekend, curious to hear the best way to set it up/recipe/recommended temp from the forum here...

Been egging for almost 10 years now, but this will be my first crack at pulled pork.

Thanks for any and all feedback!

  • Plate setter and cook between 225-325 until around 200 internal when it probes nicely. If you go a higher cook temp use a less sugary rub.

There is no best way!!!!!   Pork shoulder can be cooked in varying ways to great results.    Setup for an indirect cook.  Egg temp somewhere between 225-375º.  Add some salt to the pork and cook until tender (normally 195-205º).  Anything after that is personal preference.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

these are pretty easy to do, basically a rub of choice and cook it indirect til done =)  only thing that could be done wrong is buying a small one

you can lead a fish to water but you can not make him drink it
  • I was worried about how my first one would turn out. A couple months ago I did it and it turned out 10 times better than I imagined. I did two at once this past weekend. One was for a friend.  I just salt a few hours or over night if waking up early to start it. Rub with olive oil first then salt.  Then as the egg is getting up to temp and getting to clear smoke I put the rub on. Once up to temp I put it on and pull at 203 degrees. Normally average 250 to 275 in temp expect about 12 hour cook.

Don't worry about a butt. It's probably the easiest thing to smoke. If you manage to botch a pork butt, u really effed up. Do whatever you want with it, just dont pull it until it probes with very little resistance
  • I just did my third one a few nights ago, and though I'm not fond of saying many things I have cooked is the best of whatever that is that I've ever had...but I do believe this was.   My first two were not bad, but this one was by far the best, and the only one I've injected.   Not sure how much that impacted it, but I will do it again on the next one for sure.
