Pickled eggs

Stuck inside tonight here in VA beach. Decided on pickling some eggs. These are with beet juice and apple cider vinegar. Sometimes I'll just toss them in a jar of pickles and those turn out good too.

Yum yum yum. I just ate like five for dinner at a salad buffet. They were ok I would love to see some recipes posted here of different variations.

Stay safe in VB. We left the eastern shore of Maryland to travel to western pa early this morning.  Hope all fairs well as we won't be home u tip Monday.

I think it would be very difficult to locate a vessel big enough to pickle my XL Egg.

I toss them in the remnants of a jar of jalapeno juice or pepperoncini juice

How did you come out with the storm?  My dad lives in VB Bch and just had some minor flooding in the backyard.  I live in Franklin and when I got up this morning it wasn't even raining.  Looking at the radar, we were just on the edge of it.
