Chuck Roast with RRP's Au Jus
Last week @Gunnar made a Chuck Roast using @RRP Au Jus. Looked good so I decided to try it Sunday. His post is here:

Got lucky and stumbled on this 2.75lb beauty marked down 30% at the store. Still had 2 days left before the Sell By date
Got the Egg going at 250 with some pecan chips for smoke.
Let it go about 2.5 hours. Was trying to reach 165, but was under a time crunch so I dropped it in its bath around 150-155
I let it ride like that for about 2 hours and then got to thinking, was I supposed to cover it with foil? So I foiled it for 30 minutes, then took it off the Egg, roughly pulled it and stuck it back on for another 30 minutes covered.
Served it on some potato slider buns with some provolone cheese, crinkly fries and green beans.
Pretty darn tasty. Thanks Gunnar and RRP. I'd definitely make it again.

Even without my au jus one of my favorite comfort meals from childhood is the recipe from my late Mother which she simply called beef and noodles. A nice 2 or 3 pound chuck roast slow cooked for hours then ripped apart and finished in a big pot of noodles served us for several meals. I am so thankful that she gave my wife her detailed recipe. Chuck roasts rock!
