Tomahawk Pork Chop

I have been trying to find a good locally owned Butcher for years and I think I finally found one.

I ordered a Tomahawk Pork Chop and trimmed off the extra back fat and Spare Rib meat.  I ended up brining it with:

1/4 cup Kosher Salt
1/4 cup Sugar
2 cups Water
2 cups Ice Water

Cooked Indirect at 250 and with some Cherry Wood Chips for about 30 minutes until IT of 125, then cranked up to 550/600 for two minutes per side.  

It turned out excellent!  Next time I am going to try a Tomahawk Ribeye.  What's crazy is this particular cut only cost around 7 dollars in total.
