Grilled chicken salad.

So here is the grilled chicken salad I made from the leftover chicken thighs cook I posted the other day. This makes for a very flavorful chicken salad. We cook extra chicken just to have some for chicken salad. Served with some baby carrots, pickles and a few (very few for me) crackers, this makes for a light, yet filling lunch. Grilled chicken gives the chicken salad a nice, extra flavor and makes it somewhat less boring.

I make smoked chicken salad a lot. My wife really loves it. I usually spatchcock a chicken chop/shred it for this.
