I want to thank members of the forum for all the advice and counsel I've received over the past year. Y'all's input has definitely helped my egging and, more importantly, learn to relax and go with the flow during a cook.
A recent cook is a great example (no pics so this is all fantasy). I was doing 40 ABTs for a gathering at our house. I added Kashmiri chili powder (in the spirit of experimentation), nuked the bacon before wrapping (based on advice here), and didn't get bent out of shape when the XL refused to settle in at 300 - she wanted to run at 350. As a result I was cool and collected when they were served, and the finished product, with the bacon nice and crispy, was inhaled by the crowd.
Again - thanks to all the participants on this forum for sharing your expertise, experience, and good humor.
