You should really try cooking Moderate - 275-290°. Good quality smoke, no overnights, no burnt sugar, good bark. Start cooking in the morning and ready for dinner.Southeast Florida - LBGE

^ This. I run my Eggs at 300 F, and my SF at 275-325, and love the results. When catering large events like this past Friday, I cook all my butts and briskets in pans. After 3 hours when the color looks good, I cover with HDAF till they hit the finish line, usually 5 1/2 - 6 hrs total. Remove the HDAF for the last 1/2 hour or so to let the bark harden up some.
All of my clients rave about the food. No need to lose any sleep, unless they want to eat at 11 AM.
