Stuffed Pork Butt

Stuffed a boneless pork butt with ingredients below in pic. Loosely based on a Diners, Drive Ins & Dives episode I watched. Cooked to 155 and then seared on all sides. Tasty meal. Thanks for looking.
Ingredients- salt, pepper, garlic, red pepper, fennel seeds, basil, parsley, lemon & orange zest

I do that all the time. What you're looking for is called porchetta. It's a boned, butterflied, and stuffed pig that's rolled, slow cooked, and then has the crackling crisped. Very common in and around Rome.
I do the same thing you do with a butt, but I use a bone-in shoulder and take out the bone. That way you get that great skin for crackling. If you want to supercharge your game, replace those fennel seeds with fennel pollen. You can buy it online. It tastes like sunshine.
