love my Thermapen! Making Flank steak tonight and was looking for a good temp to pull it. Around 130 - 135? does that sound right

Last flank I did was SV at 128, pulled to rest a bit and then seared down low and hot. It was a nice rare to med rare so I with @bgebrent on the 130 pull. Pulled around 130 (middle) and let it rest. Made 2 pieces and we had no left overs - I'd say it went well. As always thanks for the coaching...Northern New Jersey

I don't temp my flank or skirt steaks (normally made for tacos), as the meat is so thin. I use my old "Weber thumb" test from years ago, and grill it as hot and close to the coals as possible, to get a bit of crust._____________
