Egg as Oven
One of the initial appeals of an egg was for use as an oven when it is too hot outside to actually turn the oven on. Saturday we visited the butcher and found some really pretty beef shanks:
I did a pretty standard braise process, seared the shanks in some lard, and then added mirepoix and garlic until the veggies are soft. Added about 1/2 c beef broth, 1/2 c red wine, and a tablespoon or so of tamari. Brought liquid to a boil, and then shut off the heat. Added a couple stems of fresh thyme and a couple of bay leaves, and then nestled the shanks back in, and on the egg at about 280ish.
Once it was probing super tender, pulled the DO off the egg, pulled out the shanks, strained and defatted the liquid in the pan. Served with cheddar grits.

Looks delicious.. I agree about using as an oven, don't heat the house, but boy do you really miss out on the smell of the cook filling the house.

Looks really good.
We have always cooked outside in the summers. So a nice slow cook inside my house in the summers is foreign to me.
That's a winter time smell, and I love it!

It works just fine. I made a meat pie recipe that Bluelacedredhead gave me on it years ago. I made one on the egg and one in the oven and the egged one came out better.

I've never used the oven since we've bought our house 6 years ago. The first 5 years the oven never functioned properly. Now just out of spite I haven't learned how to use the new oven. Love how the egg cooks food. My wife will cook something in the oven but if I'm cooking it's egg or bust.
