Chuck Short Ribs

The other day Publix had a package of chuck short ribs on sale for $4, so I grabbed it and figured I would figure something out later. 

This is morning I realized I had some time, but basically no other ingredients. I threw together a quick run of kosher salt and black pepper and threw them on at 270. 

About 3 hours later I took my first look, and they were at about 208 so I pulled them. The rub was way too salty, but the meat was excellent. Very tender and juicy. 

Lesson learned is to plan cooks a little better, but also keep rubs on hand to be prepared for the surprises.
