Fantastic Grilled Rainbow Trout

Tuesday night I grilled some rainbow trout which turned out fantastic! I seasoned it with salt and pepper, then topped it with some dill and lemon slices.
I grilled it in my grill basket at 400 degrees for about 14 minutes (7 minutes per side). It turned out perfectly cooked, quite moist, and quite tasty.

hmmm... that looks more like salmon than rainbow trout. Who's your fish monger? looks delish either way but I get rainbows from my grocer and they don't look so salmony. Different flavor profile.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

I just brined and smoked 5 fillets yesterday. They are delicious this way. This is before going on the BGE for several hours at 200 with cherry chunks

@GlennM What did you brine them in? I love trout also. Tried some smoked trout, but it was a little strong with pecan wood for my taste.Large BGE - 2014

The bitterness of poor quality remains long after the sweetness of low price is forgotten!

Coarse salt, white and brown sugar, bit of lemon juice. Sprinkled with some dizzy dust and brushed with Drambuie near the end. Vac seals and in the fridge now!In the bush just East of Cambridge,Ontario
