make ahead day - 33 chili dogs in our future

Today the weather was ugly...rained then hot and HUMID! Great day to stay inside and think about future meals. Way back 14 years ago Chuck Lane posted a knock off of the chili dog sauce served by the popular Varsity in Atlanta. Over the years I have made it many times and also do a double batch since the process takes several hours and can not be rushed. I start with 2# of 80/20 ground chuck and when said and done I package it in 1/4 cup pucks which is perfect for 2 chili dogs and then I freeze them. Trust me this is a delicious, rich chili dog sauce!

Here's the best I've found so far:
1 pound ground chuck
1 3/4 cups water
2 tablespoons chile powder
2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon granulated garlic
1 teaspoon granulated onion
2 teaspoons salt
1 dash tobasco sauce
Put water and all ingredients except meat into saucepan and stir well. Add meat, breaking it up with your fingers as you go. Bring to a boil, reduce heat to a simmer and leave uncovered until nearly all water is gone and the consistency is the way you like it. This is just about as good as the chili at the Varsity here in Atlanta. They make great chili dogs!

my problem with this recipe is i eat it till its gone and i double batch as well. dont know how they cook the dogs down there but this recipe screams for butter fried dogs in a butter fried split top lightly dusted with a hot rub
