Crawfish and fatty rotel dip

Started by smoking a fatty on my small egg
Then melt Velveeta, cream cheese and rotel in a pot. Once it's melted break up the fatty and add that.
I also threw a bag of frozen crawfish tails I peeled with help at Butt Blast in the sous vide at 140 for an hour before adding it to the dip.
Best. Rotel. EVER.
Eat with these chips.

Looks delicious Scott...never thought to use crawfish like that. Will keep it in mind as we stock frozen crawfish all year round.
One lesson I learned - the farther away from Louisiana you go, the pounds per person of boiled crawfish drops.

Looks great. Guess I know what Ill be making once football season starts. I wish I could get some crawfish up here in the midwest. Closet Ive come too was an etouffee. No body does just boil.Large and Small BGECentral, IL

A naked fatty is a breakfast sausage roll covered in dry rub and smoked. I use Jimmy Dean. You can also wrap it in bacon and stuff it with all kinds of stuff (cheese, eggs, peppers, etc). It's a very popular item around the internet.

Just to add a bit. I usually throw on a few naked fatties whenever I smoke anything low and slow. When they are done, I let them cool a bit and then in the fridge they go.
Once cold, I slice them thick and and vac seal 4 or 6 to a bag. Then into the freezer.
Then whenever we need sausage patties we take out 1 bag and either pan fry or nuke them.
This way the my Egg is doing double duty.
