Cast iron skillet peach cobbler

So after prime rib on the egg tonight we had my daughters cast iron skillet fresh peach cobbler with home made ice cream. This was based on rusty roosters Apple pie recipe from Hiawassee eggfest recipe book

Easy skillet Apple pie recipe on p 36 of the 2015 hiawasee eggfest cookbook at mountain egg.com. We just used fresh peaches instead o apples with a little cinnamon and nutmeg added

Here is a cut and paste of the recipe, she just used peaches (probably about 9 to 10 nice sized peaches for the 10" skillet, more if larger ci skillet). She added a little nutmeg too, and then just cut the crust into strips for lattice top rather than flat top in the recipe. 350 dome temp indirect cook on adjustable rig was about perfect as peaches are early season and were fairly firm still pre cook.
Easy Skillet Apple Pie Tom and Karen Chamberlain (Rusty Rooster and Kentucky Woman) Ingredients:
2 pounds Granny Smith Apples
2 pound Braeburn Apples
1 teaspoon Ground Cinnamon
¾ cup granulated sugar
½ cup butter
1 cup firmly packed light brown sugar
1 14.1 oz package refrigerated pie crusts
1 egg white
2 tablespoons granulated sugar Preparation:
1. Set up egg with plate setter feet up and cooking grid.
2. Peel apples and cut into ½ inch thick wedges. Toss apples with cinnamon and ¾ cup granulated sugar.
3. Melt butter in a 10 or 12 inch cast iron skillet over medium heat: add brown sugar and cook, stirring constantly, 1-2 minutes or until sugar is dissolved. Remove from heat and place 1 piecrust in skillet over brown sugar mixture. Spoon apple mixture over piecrust, and top with remaining piecrust.
Whisk Egg white until foamy.
Brush top of piecrust with egg white: sprinkle with 2 TBSP granulated sugar. Cut 4 or 5 slits in top for steam to escape.
4. Bake @ 350 degrees for about 1 hour or until golden brown and bubbly. Shielding with aluminum foil during last 10 minutes to prevent excessive browning.

Yes, very good with the homemade vanilla ice cream we made too. The cobbler is runny so just serve in bowls.

The lattice technique is pretty easy. She just took the pre made pie crust, cut into strips with a pizza cutter, and then laid the strips one way, and then lifted and laced with strips going the other way. Extra overhangs cut off and just pressed around the edges.
