It started with a seasoned Modelo: lime, salt and habanero chilies.

Marinated skirt steak on the small egg at 475°

Corn tortillas cooked in the cast iron

Chopped pork belly and steak. Steak finished at 135-140°


Finished taco plate. Toppings were red pickled onions (salt/lime), cilantro, crema, cotija cheese, chopped red onion, jalapeños, tapatio for extra spice and a squeeze of lime juice...


Wife was happy!
