Don't let your Meat, Loaf (Pic Heavy & out of order)

Got a new toy in the mail today, so I decided to throw a little something on the Large. 
Looked through the forum and found a meatloaf recipe from @RRP. Modified it a little and used ricotta as binder instead of breadcrumbs (wife is on a low carb diet). 

Next on was some twice baked potatoes. 
The wife made some "twice baked cauliflower" that was also outstanding. 
I usually need something green, however, I didn't feel like messing with anything else. It was 115 in Vegas today. Guess I will save the healthy stuff for tomorrow.

    Very nice meat.... only 102 in the middle of Texas
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

    @Mickey we moved from Houtson last year, can't say I miss that humidity, but this heat gets out of control.

    I doubled the recipe for the meatloaf, but the half recipe goes something like this:
    -1 lb of ground beef
    -1/2 lb of ground pork
    -1 C of ricotta
    -1 egg
    -1/4 C of beef broth
    -a couple big dashes of Worechestershire 
    -a couple big dashes of Tobasco
    -1 onion finely chopped
    -1 green pepper finely chopped
    -3 cloves of garlic
    -S&P, cumin and garlic powder
    -bacon
    -favorite BBQ rub

    Dice all vegetables and garlic sauté in a little EVOO until soft. Add spices during sauté. 
    Mix all ingredients in a large bowl a mix until everything is incorporated. Form mixture into a. Loaf shape and place on doubled HD foil (I poked holes in the bottom to help with grease drainage). Place log in the refrigerator for a few hours to firm up. 
    Preheat Egg. I went with 325 and a little cherry wood. Pull meat loaf out of refrigerator and dust with rub and throw some bacon on top.  Put on the Egg. Took about 90 minutes to get to 160 IT. 

    For the cauliflower

    Steam some cauliflower. When soft mash up and add some Sour Cream, S&P, cheddar cheese, garlic powder, cream cheese, Parmesean cheese, crumbled bacon and finely minced garlic.  Combine all into a casserole dish and top with more cheddar. Bake at 400 until the top cheese is bubbly. 
    Not really amount for the ingredients, just eyeballed it. Did start with 2 heads of cauliflower, but we were cooking for about 6 people and had plenty of leftovers.
