Reverse Sear Pork Chops

Man brining makes all the difference. Picked up some 2" thick chops, simple salt and brown sugar brine for 4 hours. DP Swamp Venom on mine, Red Eye Express for the rest of the family. Bunch of apple chunks for smoke and a quick sear on the cast iron. Best pork chop I've ever had.

Roasted brussel sprouts and some stuffed Jalapeno's on the little Joe. Hit the spot.
