Low carb chicken parm on the egg

took some chicken breasts, coated in coconut flakes and placed in my CI for about 20 sec per side. Removed them and cooked at 400 raised direct for about 5 min per side. 

Tooped with provolone cheese, mozzarella cheese and the lowest carb marinara sauce I could find. 

Paired with cauliflower bread sticks. 

Total carbs: 7

Deliciousness: 9/10

    That looks great!  Did the coconut flavor remain or did it all mesh together?

    Looks good, sounds good, except I don't eat that much cheese in a month! Wish I could!!

    I have never paid much attention to carbs, but the last place I would have thought to look would have been marinara. Here's my go to recipe if you're interested, from Lidia Bastianich. DELICIOUS!! I make a batch, eat some and freeze the rest in one cup containers. Always on hand, but even if I run out, it's quick and easy.

    That looks great!  Did the coconut flavor remain or did it all mesh together?
    It remains, and it gives it a good fried texture. Not quite as crispy as bread crumbs but it's good.  Thanks

    Looks great! Did you dip the chicken in egg first to make the coconut stick and I assume it was unsweetened coconut?

    1 cauliflower Head
    3 eggs
    5 oz grated cheese

    Grate the cauliflower until it's flakey. (Put in food processor or blender)
    Microwave Then for 10 minutes
    Mix the eggs and add salt and pepper to taste
    Add the cheese and microwaved calufliwoer - This will create a creamy mix.
    Put parchment paper down on a baking pan, and spread the mixture ( like a cake)
    Cover with oregano and bake at 350 for 30-35 min.
    Cut in sticks and pair with olive oil or whatever.

    They really taste good.

    That looks fantastic! I'm diabetic and didn't think marinara sauce was especially high in carbs. I went out and researched and my thoughts were confirmed. It's typically less than 15 carbs for 1/2 cup which is not that bad to me. I may have to try that recipe.
