Quick question for the Pros. I'm doing 2 pork butts on my Large but I can't fit them with the v Racks I have. I was wondering if I can just put them side by side on the grate above the pan. Never done it like that does the v rack help out I just like them to get the butts off the grill

Yes - put them on the cooking grid.  I think the v rack just gives you more things to clean.  Don't know why you would use it.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.
