Seasoned both an hour before hand to get them happy. Shrooms went first, then the beef. Red wine, steak, and mushrooms just taste so good together.


And a martini just seems to make a great appetizer. Beefeater, dry, stirred, with 2 olives, and 2 ice cubes.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I think I hit on something with the mushrooms this time. I cooked them faster than I normally do. I also heavily salted them and let them sit in a colander over a bowl to draw out some moisture so they'd be less watery.I like my butt rubbed and my pork pulled.
