Thinking of picking up a pack of these at Costco. I see a few people on here grilling them can they also be done slow cooked and pull apart?

From what I've read, most boneless short ribs are the tender ones from the plate section. They are great low and slow. I don't know that I've ever made them pull apart tender, but they do turn out very well. If they are from the chuck section, they might need a period braising in foil.
For pulled beef, the chuck toast braised is usually the best.

They can be be but it will take awhile. I cook them like a brisket, low & Slow. I have only done them once and I prefer them to be tender enough to bite through, not pull apart. You may want to smoke them to 160 or so then you could wrap them in foil with some beef broth and then cook till they probe like butter say around 200 or higher. I found this on Amazing Ribs.

I did a cook a while back which I documented here:

On this one I wrapped them in foil for a while but have since done it without the foil and just cooked them a little longer. I think they came out great.
