First Pork Belly: What is the best way to cook it?

I have had my large BGE for a couple of years now and have cooked all the usual things (ribs, butts, steak, ABTs, brisket, chicken, kabobs, etc.), but have started to try more adventurous cooks. I picked up a pork belly from a local farmer and am trying to decide the best way to cook it. I would appreciate any suggestions.

We did some pork belly burnt ends that were a big hit. I really didn't follow a recipe just went with a spicy rub, cooked indirect @ 250 dome until 185 IT. Then cubed it up and back on the smoke in a pan with some BBQ for a couple hours. Google pork belly burnt ends for some additional ideas. GLEdina, MN

I saw a show where they rolled it and tied it. Then smoked for hours and sliced when done. Then they grilled it to finish!
