Wing Sauces

Next month, I have to do a major wing cook, and actually cooking on a big trailer offset smoker so I'm kinda nervous bout that. But my question is, do y'all have any recommendation wing sauces. I usually use Moore's buffalo sauce but wanted to mix it up a bit. Fire away.

I usually don't sauce my wings, but you may get more quality input if you outline what type of flavor you're looking for.
Do you want sweet, spicy, jerk, Asian, etc.
I'm sure someone will be along shortly with recommendations.

ive been doing one someone posted on here a while back that's extremely simple. 1/2 cup of orange marmalade and 1/4 cup each of honey and your favorite hot sauce. I usually chop up a couple habaneros for some extra kick.

I mix equal parts of wing sauce and ranch dressing. Heat it up some and add a little butter.

I really like this honey Sriracha sauce. I don't really measure, but it's roughly 1/4 honey, 1/4 Sriracha, 2 cloves garlic, 1 lime juiced and zested, 1/2 stick melted butter.

One thing I failed to do when writing the recipe was to include the initial 1/4 cup of jalapeños in the food processor along with the mango chutney.
Also, Raichlen's recipe for Piri Piri Wings is the bomb.

I like the Ken's wing sauce pretty good. I cut it with butter and honey.
Others I like are Texas Pete, Franks, Christos (local place), and Hooters sauce.------------------------------

I typically use store bought sauces, but if I feel like make my own I make a garlic siracha sauce. Start with this:

I don't really have a recipe for it, I just kind of wing it(pun intended). I start out with a couple tbs of butter and let melt down. Add some brown sugar. Once that dissolves I will add some apple cider vinegar. And finally add sriracha chili garlic sauce. Let simmer for 20 min. Add some to the wings last 5-10 min of cook and then add more just before eating.

We have really been enjoying this lately. Pull the wings off and place them in a a large bowl. Mix in a liberal amount of SBR and toss around in the bowl. After applying SBR, we sprinkle some KC on them. Put back on the grill, or in the over for another 10-15 minutes and YOU ARE SET!
