Chicken Quarters

10 lbs for $4 bucks. So I threw some on the barbie... Used apple and olive woods for the smoke. 2 racks of them with the oval stone under the AR. Elevated drip pan was used under the chicken. Seasoned the chicken with a 50/50 mix of lemon garlic and island thyme seasoning. Then made a mop consisting of rice vinegar, apple cider vinegar, canola oil, annatto powder and the same seasoning I gave the chicken. The smell of the backyard was phenomenal.
Served it it up with some Bone Suckin' Sauce on the side. Good stuff. Gonna pull the rest of the chicken and freeze for leftovers.

Legs are great and thighs are great(er), but for me, quarters never seem to turn out as well. No idea why.
Mostly, I just cook thighs.I hate it when I go to the kitchen for food and all I find are ingredients!

Great looking cook. Your post brings back memories of a friend of mine who cooks chicken halves with a similar mop recipe. So, I know the aroma you described.

Nice looking snack. Last time they were $.40/lb bought 50 lbs, cut the backs off and made 4 gallons of fresh stock, added the thigh bones and some seasoning. separated the thighs and legs, deboned the thighs and did stir fry, the legs became lollipops. Still have lots in the freezer for next snack.
Saw some this weekend here in Melbooring Fl and they were $3.90/10# but still have lots left over from the last batch.
