i use foil actually. a drip pan of foil. But this is the first high heat use of the BGE indirect in a long while, and so the whole system is jammed with fat. Needed a good clean burn
this is the pizza for the 16year old. He will have consumed it entirely before ours (mine and wifey's) is even done

last pie was carmelized red onion, salt and cracked pepper, VERY thin crust, fresh rosemary, red pepper flakes, and that's it
the red onion goes on raw and carmelizes in the copious amount of olive oil.
This was a pie introduced to us by @EssexCounty 'in real life'.
