Pulled pork enchiladas

Made pulled pork Sunday for tacos with friends. Spanish rice, picco de gallo, guacamole, and sautéed onions and peppers. Bread pudding for dessert made in a camp oven. Today I made pulled pork enchiladas. Rolled pork, pepper jack cheese, and some grilled onion & peppers in corn tortillas. Used some Hatch brand enchilada sauce and more cheese to finish. Simple yet tasty. Washed it down with a frosty adult beverage.
