Pork Butt

thought I would use a Pork Butt for pulled pork, however it was a small one for my first and it had strings on it which I left on.  I tried the turbo Butt, seems it was dry at the end.  Cooked it around 375deg from 130 to 5pm.

Cooked at indirect heat as I flipped the inverter and set a pan under it.  I guess the only to really have it moist is to infact cover it with aluminum foil at some point. Hmmmm.......wont rush to make another but if I find one on sale reasonable price I will attempt it again.

    Try 250 dome and about two hours per pound. Temp of meat should be around 200, but the thermometer should slide in with no resistance.
    Strings left on are not a problem. Smaller butt make take a different amount of time, but this is the most forgiving of any meat to cook. No water pan, no foil, just low and slow good pork. One will go on shortly for an all nighter.

    two butts the same size often take different amounts of time to be 'done'

    what was the internal temp, or how did you decide it wasready?
