I had to cook a couple of pork butts for a kids school function today, and everything possible went wrong. First, I had to deliver the food at 10:30 for an 11:00 function, which was too early to start the cook in the morning with any margin of safety, and I was tired last night and not thrilled about an overnight cook. Then my Maverick died, so now I was actually going to have to wake up throughout the night to check on the cook. When I checked on it at 4:00 a.m., my fire was almost out and the temp was down to 140...even though I lit the coals in two places, it burned over to one edge and starved itself out even though the Egg was still 3/4 full...I raked the lump around and got it going and went Turbo. I pulled it about 9:00 when it hit 200-205 IT, but it was not probing very well...a few tender spots but mainly feeling tough. I wrapped FTC but told my wife not to expect much.
When I unwrapped and served (at what ended up being noon), I was shocked...it pulled incredibly easily and was super moist and tender. Not the best bark, but actually one of the better pork butts I've done recently. Pure dumb luck, and I couldn't begin to recreate the scenario.

I love pork butts, they take the abuse and then make you look good. Great story, but we have to be careful, can't let evryone else know how forgiving they are. We have reputations to live up to.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Maybe the gods smiled because the cook was for a good cause
But the kids and others enjoyed it.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
