Chicken Fried Chicken with Truffled White Gravy on the Mini

Cut two big chicken boobs in half lengthwise and pounded the halves flat with a spiked kitchen hammer. Then dredged in a flour/panko mixture, then dredged in an egg wash with milk mixture, then another flour/panko dredge. Fried up on the mini. Made a simple white gravy at the end and seasoned it with cracked pepper, oregano and truffled sea salt. Served with some slow cooker pinto beans and rice. So bad for the waistline, but so good for the tastebuds.
