Pork loin

i bought a whole pork loin from SAMs club and cut pork chops from it. Saved about 5-7 lbs and thinking of cooking it. Anyone have any ideas.
Lbge. Maverick 733, ss top, 30" fire pit, gas grill, small charcoal grill, electric smoker, 65 qt yeti, 35 qt yeti.

It was just me and the boy tonight so I cut a small loin in half and put in a basic brine for two hours then cross scored the fat side about a 1/4" deep. I used Trader Joes coffee rub (pretty solid pork and chicken rub) and threw on at 275 until internal hit 150. I then took off and glazed with an apple butter and maple bacon jam glaze. Put back on till internal read 160, turned out great and I have leftovers for lunch tomorrow.

A little rub and cook to 140.
