Low and Slow Boston Butt Direct Heat With Video

I tried a new technique last weekend and I was very happy with it. I would call it a minimalist cook. The butt sat directly on the grate with no plate setter or drip pan. I used Royal Oak lump (buy the bigger bag for bigger lump), Apple wood chunks, a looft lighter, mustard, Bad Byron's Butt Rub, meat claws and foil....that's it. The butt turned out just a good as a high maintenance indirect cook. The only noticable difference was in the bark but I think that was more timing related than anything else. If anything, this should have established a better bark. I foiled the butt before a good bark could establish because I knew I was going to be cutting it close on time for dinner with guests coming over.
