Thanks for all the comments & advice. UR all correct, leaving bottom vent open is Key !!! Cooking has been great. spouse loves the polanked salmon - best she's ever had.

Before you get hammered by someone (just happened this week), search the forum and google "brisket big green egg" to get you started on how to cook a brisket. I always use those starter squares. I scatter 3 of them in my Large and only 1 in my Mini and never have a problem starting up, vents full open for about 15 min. I'm a little intimidated by using a torch (that's a girl thing).2 Large BGE, MiniMax, Miami, FL
