Cornish Hens

Happy Saturday Eggcellent Eggers:  Any methods for making Cornish Hens in the egg, temp and time, etc would be greatly appreciated. Thx

    I've only done one. I spatched it and cooked raised direct @ 350 on the dome. Came out great.

    They are a Christmas tradition on my wife's side of the family. I cooked 20 of them on 3 different eggs. These were stuffed and seems like they took about 1:15 or a little more at 350. We had the eggs completely stuffed with hens though. Not my recipe - I just got recruited to cook em. Lots of butter basting and a little apple chips for some nice smoke taste. I don't remember much else other than it required a tremendous amount of babysitting so they all got browned nicely.

    We love them and egg them regularly instead off full size yard birds. I just spatch them and then breast side up for 50 minutes at 350 direct then flip for 20 more. If you prefer on a raised grate then go 400. Rafts of fresh asparagus are great sides.

     Surprised you are not going the rotisserie route!  :)

    Spatchcock 'em. I like to quick brine for a few hours, and with a simple rub, or salt and pepper on the skin.

    Raised indirect at 350 or so, then a quick finish over high heat to tighten it all up.

    Thanks, neither brined nor basted. Extremely light smear of veggie oil and then a DP rub. Apple chip smoke helped to produce the color.

    @smbishop...Oh but I am going to rotisserie the hen.  Spackcocked it, drying in the refrigerator, and will be putting in the basket with salt, pepper, and a little smear of duck fat and twirl away.  Will post pictures.  :)

    Well, the 14th annual Peoria Eggfest is Saturday, June 4th 9 to 3 if that works for you. Over the years it has drawn from Chicago to St Louis, and from the Quad Cities to Indianapolis. Then also Jim's 3rd or 4th eggfest is Saturday June 18th. Then there has also been one started down in Columbia, by St Louis. Where is this new startup in IL going to be?

    I've been an avid egger for 16 years and have never understood how the Chicago area has never been able to get an eggfest going! In 2008 & 9 there was one in Oswego, but that dealer closed her biz. And then one year there was a BGE event, but only 6 professional cooks were allowed too cook and that was at a Chicago restaurant called Carmichaels. I mean just 3 Chicago area events in 16 years???

    @rrp.  I hear you.  One of our local dealers is starting it.  I am not sure he wants it announced yet but I will ask him and get back to you.  He's terrific.  My hen is on!

    He ought to at least attend some smaller eggfests and talk to the owners. My suggestion is these are fun-fests and NOT contests! Insert the competition aspect and he will screw it up royally! Also charging people to attend much less to cook adds another negative element! One last thought...if he isn't planning to do this until Sept then the mindset for far too many people is the
    "grilling season" ended at Labor Day - especially as far North as you are! Sept for diehard eggers means nothing, but for his prospective buyers they may stay away - besides HS football season has already started and that too may keep people away. I'm not trying to be nasty - just helpful. Please feel free to pass along my thoughts! BTW is he even a member here yet? If not then WHY NOT? Get my drift? BTW yesterday I did a demo cook at my dealer's business and he sold 2 and for sure there are 2 more in the wings.
