Late Cinco de Mayo Party

The was our neighbors second annual Cinco de Mayo Party.  First as I trying out my new grill cleaning pad, my second plate setter broke in two.  I was able to wrap it in heavy duty foil to be able to use it.  I mixed up some OJ, Negra Modelo beer and some minced garlic for a marinade/injection for two pork butts.  I injected them both and marinaded them for about 18 hours.  Pulled them out at 8 am after getting the XLBGE lit. Rubbed them with a mixture of 3 or 4 different kind of rubs for a southwest theme.  Put them on the Egg when it got to 235 or so.  The egg dropped to 215 and stayed there for about 45 minutes so I had to open the vents up to get them done by 6, I hoped.  By 3 pm they were about 160 so I pulled them off to rest while got things ready for the next part of my cook.  I made pork burnt ends out of a 9 pound one and was making carnitas out of a 10 pound one.  I should have gone with the 9 on carnitas or just made them both pork burnt ends.  My wife was picking up ingredients for my braising liquid and forgot her credit card.  I had to drop everything and take her mine and wait on my ingredients.  When I got home I put everything together for the braising liquid into a roasting pan, put the 10 lb one in and covered it with foil.  I then cubed up the 9 lb one, put them into two foil pans, added more rub and a new sauce from my Egg dealer that they came up with that has ghost peppers in.  Then put the two trays on the egg for a couple hours to caramelize.   At 5 the pork burnt ends were ready so I took them over to the party.  The carnitas was talking so long, at 4:30 I cut it into smaller chunks to get done.  BY the time I got the carnitas over to the party everyone was full.  Both were good, but the pork burnt ends were a hit and everyone was asking me how I did them.  I think I will not be doing pulled pork for a while and stick to the doing the pork burnt ends.  easier to do and in less time.  My 7 year old went back for seconds.

The party was pretty as a whole was good and my neighbor was fun to watch.  He was having so much fun he forgot my wife's name.  Lots of good food and drink.  I had a few shoots of coffee Patron with Bailey's, shot of Mezcal and a few beers, but never felt a buzz.

Next year I will be just doing the pork burnt ends and that is all.

Thanks for looking.
