Tri Tip and Fingerling Potatoes
Dyal_SC
Posts: 6,328
Earned some brownie points from the wife on this cook. Did a reverse sear on the CI Platesetter that @theyolksonyou gave me a few weeks ago. I love that thing. Thx again Jason!! Also made the fingerling potatoes that @Chubbs posted awhile back (EVOO, S&P, fresh rosemary and fresh garlic). The drippings from the tri tip gave them extra flavor too. Crazy good! And also really easy. The pix:

Thx guys!! @theyolksonyou , this was the first time I've used that side of the CI platesetter for searing. Worked like a charm. Can't wait to use it for kebobs. Thx again!!

Amazing! I did my first tri-tip Saturday and the MRS loved it. What size roast was yours? Mine was 2-3 pds and the "hammerhead" end was nearly as big as yours though. I picked up two of them and will definitely give the potato idea a go next time. Did you marinade or serve with any kind of sauce?Large and Small BGECentral, IL

Thx guys!! @saluki2007 , this was a 2.7 lber and I didn't use a marinade. Kept it simple as per @northGAcock 's instructions of just EVOO and seasoning. It's a great cut of beef.
-
You can marinade with evoo, salt, pepper, and minced garlic but take the garlic off before cooking or else it will burn. I don't know the full recipe off the top of my head though - it's an America's Test Kitchen recipe.
-
@EastTNBGE , the CI Platesetter is nice. One side for searing and the other side is ridged to where it elevates your drip pan slightly. It also doesn't soak up drippings like the ceramic PS. And it is very hefty. I can imagine it could take being dropped like a champ.
-
...Yawn....another delicious looking cook from Craig. Nothing unique to see here, but the best looking tri tip ever, and those mouth watering fingerling potatoes, which makes me hungry again. It would have been perfect if it we're reverse seared to perfection, .....oh wait, nevermind.

Why do you like the CI plate setter? I am just trying to learn from the experts!AEgger; griller of the house in NC; lg and sm egg
-
@AEgger , ^^^look 4 comments up. It has a searing side, a side with ridges to elevate the drip pan (eliminating acrid smoke from dripping directly on the PS), and it is way more sturdy than the ceramic PS. I've dropped and broken 2 ceramic platesetters so far. I very seriously doubt the hefty CI PS would succumb to a drop. It isn't necessary, but it is a very cool Eggcessory.

So did you use the CI plate setter for the cook and then flip it for the sear?
-
WOW! Love it.
Be careful when following the masses. Sometimes the M is silent.
