Chicken Tetrazzini. Comfort food :)

Chicken Tetrazzini, mostly like Mom used to make, but with more vegetables and spinach and cooked on the Egg. I think it's the same ancient Pyrex casserole Mom always used for tetrazzini  Good stuff!

    Looks absolutely incredible.  Tetrazzini is one of my favorites, and I never thought about egging it!

    Didn't really use a recipe, just put together the stuff I remember. Went kinda like this... Poached a big chicken breast, sauteed some onion, garlic, carrots, celery, tossed in some mushrooms and spinach and put it in a big bowl. Cooked and drained some spaghetti, and put a can of Campbell's cream of chicken and mushroom soup on with some chicken stock until it was creamy. Mixed it all together with some grated cheddar, greek yogurt, frozen peas and grated parmesan, and put it in the buttered casserole dish. Some more cheese on top and on the Egg at 350ish for an hour or so 'til it looked good.

    My Mom's chicken T never looked that delicious.  But then, she didn't cook on an egg ;)
