Possibly my best meatloaf yet.

So meatloaf is one of my favorite egged dinners. Here it is going together. I used 2.5lbs ground beef, one finely chopped onion, one finely chopped bell pepper, two eggs, half cup bread crumbs, one can diced chili tomatoes with lime and cilantro, salt and pepper and lightly sprinkled it with Dreamland rub.

375 until internal temp of 160 No glaze to save a tiny bit on carbs. No ketchup in the mix either...Just some hot sauce and a little Sweet Baby Ray's but not much.

Mighty tasty. Smoke ring looks nice to me, and there was not an overly smokey taste, just about right with only a small amount of apple chips tossed in the fire.

That looks really good!! I can tell you are doin the healthy game like I try to. Not knocking your loaf but check out this recipe. Prolly one the most moist turkey loafs I've ever made.

Looks great. I made meatloaf on bge twice. Both times it was a hit, it has been a year or so since making it and this thread has inspired me to get back at it
