I have the uuni 2s, gave up on using pellets after 1 or 2 tries, probably user error/incompetence.  Much easier with a gas burner from a turkey fryer. Really want  a Roccbox though but too bad they don't ship to the GWN.
Check out uuni and Roccbox groups in FB for user reviews. Many uuni users wish they bought the Roccbox instead.
I was in the I wish I got a roccbox camp as well,  great design, multi fuel capability and ease of use,  but then when I saw the price I figured two uunis for price of one roccbox helped me cope with having the lesser of the portable pizza ovens.  Maybe someday a roccbox is in my cooks toolbox....

The  uuni sleek profile makes it really easy to take on trips and as long as air flow is allowed back to front and the pellet hopper is kept full I can keep it not a long time....

Id love to see your setup for gas burner....is it high pressure or low?  Would it matter?  You can tell I know jack squat about propane.  HANK hill to the rescue....

Oof ... Roccbox in the UK jacked the price up for £399 to £499.

I tried both high and low pressure burners.  High pressure cooks the rim before the middle is done, prefer low pressure. I use a small bench vise to hold the burner, can't find photo of my setup...

    other ideas from FB...

@Eoin UK I think. It's so consistent and reliable this guy uses it commercially cranking out pizza after pizza at a farmer's market ...

Price increase here must be all of the parts they import to build it.

There's an update on the price increase on the Roccbox website:
