so I read around and got a feel that I should cook at 250 for about 1.5-2.0 hours. I ended up smoking these using cherry wood and at 300 indirect. They were ready in 1 hour. I used Meat Church Honey Hog (top tier) for the wife who doesn't like spice. I used Lane's BBQ Sweet Heat on the others. I think they came out decent. I will try to fry them after the smoke next time (using spider wok in Large BGE).
Cooking on a LBGE and MM down in Miami, FL.

IMHO, do them raised direct at 400 after an overnight exposed in the fridge. Takes 45 minutes. Rub of choice and then sauce at the end.Sandy Springs & Dawsonville Ga
