How do you keep lump lit when smoking salmon at a low temp

    i assume you are talking about hot smoking- check out the naked wiz recipe and walk through- it's full of good info. 

    As for the low temps- I use a temp controller so can hold very low temps. For manual control not sure I would attempt much less than 190-200. It will take a lot more monitoring and I would make sure you have good ventilation through the charcoal bed. 

    Good luck- the smoked salmon is totally worth the effort.
