I finally got around to smoking some cheese.  And now we wait!

Any road will take you there if you don't know where you're going.

    Just smoked 27 pounds or so of cheese. Heading to the post office tomorrow to pick up the roll of vacuum sealer bags...
    Your cheese looks beautiful.  What did you use as a smoke source?  How many hours?

    I use the A-maze-N smoker in my large egg with an apple wood pellet and cherry wood chip mix.  2.5 hours.  The vac sealed bags will keep the cheese in the fridge for 6 months and this stuff only gets better with age.

    Any road will take you there if you don't know where you're going.
