OT-beautiful weather so a stick burner cook today

Been waiting for a nice day to fire up the Lang. Today is it, not a cloud in sight and its 70. Trying to use up the last of my meat before I head out of town next week. 

Started with some pecan and cherry rubbed down the ribs and pork with some joes KC rub.
 Pork and rib tips went on around 10. Just threw the ribs on at 2pm. Been maintaining around 275. 
More to come as it progresses.

    Temp got a little crazy and hit 375 for a long time. I just ran with it. Some of the best Q I've ever tasted

    Sure looks good!! My theory is as long as the grease isn't smoking on the reverse flow plate it's still good smoking temps.

    Oh duh... I was on my phone didn't see your signature.

    I have only used mine about 6 times so far... The flavor can't be touched but I have some major problems with my fire. 

    Not sure if I'm using too big of splits or what.  I get it going with a charcoal bed of unlit charcoal.  I place my hot chimney full of coal on top and throw a piece of wood on.  From there on out I just keep feeding logs every 45 min or so.  A lot of times the coal bed dies out before my log finishes burning and it stops burning. 

    It actually happened today, my fire completely went out.  I had to throw about 3 starter cubes in to get it going again really quickly.

    Not sure if the splits I'm using are just way too big or what.

    After then I just made sure to have some of my EGG wood chunks around to feed the fire so they would light up quick and help a part of my large split that wasn't burning.

    Going back to your other post to see your smoker.  I notice yours is rather large.  You can probably keep a pretty big fire without a problem.  If mine gets too big my temps rise rapidly.  It's hard to keep a small fire while keeping the logs flamed without going out.

    Actually I have the same problem.  I took the splits I get dropped off for firewood and split most 3 times long way and cut them in half. In your case you are likely to want to use chunks more than splits.  I use splits about the size of a 16oz can.  You probably want something more like an original redbull can.

    I started to set a timer at 20 minutes, then spread that time longer and longer till I got to where every 40 min my timer goes off and I add a stick. The temp isn't really falling yet. But it will and I'll lose my bed if I go longer. I can go longer with bigger splits but my temp spikes a lot. I have an insulated firebox and it runs really really efficient.  

    Are you running with all the vents wide open?

    I do have them wide open. 

    I didnt figure feeding it with chunks could keep something that large hot enough. 

    I have 1/2 cord of cherry with pretty big splits. Guess before each smoke I'll just take about 15 splits and chop them in thirds. 

    Got any any pic of your splits? Curious what the size your using looks like.

    Start with this size and see how it works. I do add two a lot of times. So you may be good with 1.  I cut my sticks in half,  you may thirds.


    You want to split with either a maul or a hydraulic splitter. I have a friend with an 18 ton gas powered hydraulic splitter and he's always willing to come help. I use a miter saw to cut the thin splits down from there.
